Has anyone else noticed that while riding and using the Menu button to scroll up that it'll sometimes change the Mode (eg. goes from Rock to Roll)?

Only the Mode button should do this function ... must be a bug in the software.

I would be VERY hesitant to faf with settings while on the move. I like to keep my attention on riding, on the rest of the world. If I feel the need, I stop.

That observed, I admit that I positive lóath buttons/switches which are not; I mean touch thingies. Like in my car I want a light switch/dial which clicks in positions clearly marked with a pictogram. On the R18, pushing buttons without any feel, going through a menu looking at an LCD display for what you did... hmmm, not on the go. I mean see what happened when the OP was changing settings

It's happened several times and I'm sure it wasn't a mis-touch on the wrong button. I prefer to ride with the RPM showing on the LCD but there'll be times when it'll go to something else (like when the fuel reserve light comes on and it switches to the count-up km). When that happens I lose the RPM and will use the Menu button to get back to RPM.

I understand Petrus's concern but I'm not necessarily doing it while riding, also while stopped. It's dangerous too when my right wrist is used to ROCK Mode and I'm switching to RPM at a left light and the Mode suddenly goes to RAIN ... not good when your expectation to move quickly gets neutered big time.

I'm afraid riding season may be over until the spring here so I'm not sure I'll be able to see it happen again for some time but I'll also need to make a mental note to see if there's a pattern to it.

My 1st service was a couple of days ago and I was supposedly up-to-date on software.

From the owner's manual:
Mode changes
The riding mode can be selected while the vehicle is stationary with the ignition on. Under the following precondition, it is also possible to change modes while riding:
No drive torque on the rear wheel.
No brake pressure in the brake system.
The following steps must be taken to change the riding mode:
Close the throttle twistgrip.
Release the brake levers.
Deactivate the cruise control.
The desired riding mode is initially preselected.
The mode change does not take place until the systems in question are all in the appropriate state.
The selection menu does not disappear from the display until the mode change has taken place.

Happened to me, but then I realised my finger was on the wrong button.......
So I was out on Sat and this is exactly what was happening I humbly admit.

My gloves thumb is a little longer than my actual thumb and the tip of it was reaching over and touching the Mode button.
